Ingredients

  • 50g soft silken tofu (about 2 tbsp, well-drained)

  • 1 small egg

  • 2 tbsp broccoli florets (fresh or frozen)

  • 2 tbsp water (or EBM/formula for extra creaminess)

  • ½ tsp neutral oil (optional, for added healthy fat)

Step-by-step Method & Tips

  • In a small bowl, gently mash tofu with a fork until smooth.
    Beat egg lightly, then mix into tofu.

  • Add 1 tbsp water (or EBM/formula) for a soft, custardy texture.

  • Pour the egg-tofu mixture into a heatproof baby bowl or ramekin.

  • Steam the mixture over low-medium heat for 10–12 minutes, or until just set (centre should be wobbly like soft pudding, not rubbery).

  • In a separate bowl, steam broccoli florets until very soft (about 7–8 mins).

  • Blend or mash broccoli with 1 tbsp water until smooth.

  • Top the steamed egg tofu with a swirl or dollop of broccoli purée, to serve
